THE PROJECT
The Springboard project is all about catering and hospitality. The students will learn a variety of facts and skills before organising their own afternoon tea event for which they will bake fresh produce.

TRAINING SESSION 1
The first training session was all about looking at what it is like to work in different places like pubs restaurants and takeaway shops and the different types of jobs available in catering and hospitality.

TRAINING SESSION 2
This session was all about hospitality. The students looked at folding serviettes and putting them in glasses, serving drinks with a tray and then trying the six cup challenge. The students also looked at sandwich ingredients and menus, designing their own sandwiches from a list of ingredients.

TRAINING SESSION 3
Today the students visited the Tickled Trout pub in Barlow near Dronfield. They had a look around the pub and then learnt how to set a table with knives, forks, plates and glasses. They also discussed what kind of behaviour and manners would be right for someone working in that job.

INTERESTING FACTS ABOUT TROUT
[a] Despite their tiny brains, lake trout can outwit anglers. [b] Lake Trout can see in every direction. [c] Trout tickling is the art of rubbing the underbelly of a trout with fingers. If done properly, the trout will go into a trance after a minute or so, and can easily be thrown onto the nearest bit of dry land. |
After sampling some of the delicious pizzas, the students had a tour of the kitchen to see where the magic happens.
It was really good nice to see how the waitresses set the table and all that stuff. I learnt new stuff like putting out cutlery properly

TRAINING SESSION 4
The student's were busy working with money today looking at how money works and how to deal with customers. They then swapped money for food and conducted some taste tests with all different kinds of foodstuffs such as limes. raisins and chocolate. They recorded their reactions to the different tastes. The aim was to show that there are a variety of foods and that different people like different things.

TRAINING SESSION 5
Today the group got baking so that they could get in some practice before the afternoon tea event. Everyone made scones, going through all of the baking processes from start to finish. Of course, the scones needed tasting when they were done. After scones had been consumed they moved on to the 'decorate a cup cake' challenge. These of course would have to be eaten as well once they were done.

AFTERNOON TEA PARTY EVENT
The students put on a fabulous Tea Party Event for visitors. This included tea, sandwiches and cakes, all prepared and served by the students. At the Tea Party the students were able to showcase all of the skills they had learnt as part of the Springboard training programme. These included menu creation, preparation and baking, presentation, hospitality and dealing with money.

The sandwiches were very good. My favourite was the ham salad. The hospitality was great and they were very good at looking after me. I tried the carrot cake - it was good! All the cakes looked really good and the table looked nice. It was fabulous!

The lemon cupcake was my favourite - it had lots of topping and tasted lovely. I think the team made interesting sandwich fillings and good cakes |
